Swiss cheese is a popular cheese that can be easily recognized from its holes. Curiously, those holes have become smaller and fewer, and some people wanted to know why. Searching for an answer, Swiss scientists found a new explanation for where the holes come from in the first place.

瑞士起司是一種從孔洞就能輕易辨識的熱門起司。奇特的是,那些孔洞變得愈來愈小也愈來愈少,有些人想知道為什麼。瑞士科學家尋找答案時發現了一個起司上的孔洞最初從何而來的新解釋。

 

For around a century, people thought the holes in Swiss cheese were caused by bacteria. The idea is that bacteria release carbon dioxide inside the cheese, and this process created the holes. However, a new Swiss study found that the holes are actually caused by tiny pieces of hay. These pieces got into the buckets that were used to collect milk for making cheese. The holes are slowly disappearing because we now use milking machines and cleaner methods to collect milk.
